Our Chum Salmon Roe, also known as Ikura or Red Caviar comes from west coast salmon in British Columbian waters. Chum Salmon Caviar is very high on lean protein and Omega-3 fatty acids. The salmon produce delicate, soft-shelled, medium-sized (around 5mm) pea shaped grains (eggs). The have a firm and oily texture but not greasy. Chum Salmon Roe are pliable to light pressure but will break with a trademark “popping” sound when you press them between your tongue and the roof of your mouth. The inside of the eggs are juicy and have a color and consistency similar to that of honey. The Roe can be processed by using different methods such as brining, marinating, curing, and fermenting to enhance the flavor profile and make it safe for consumption.
